    Ingredients

    For the apple pie filling:

    • 3 small apples sliced thinly
    • splash lemon juice
    • 5 tablespoon coconut sugar
    • 1 teaspoon vanilla extract
    • 1 teaspoon cinnamon
    • 1 ½ tablespoon tapioca flour or arrowroot flour
    • 1 cup water
    • ⅛ teaspoon nutmeg
    • ⅛ teaspoon ginger
    • ⅛ teaspoon allspice

    For the cookies:

    • ½ cup vegan butter
    • 1 teaspoon vanilla extract
    • 1 ½ tablespoon molasses
    • ¾ cup coconut sugar or brown sugar
    • 1 egg
    • 1 tablespoon tapioca flour or arrowroot flour
    • 1 ½ cup gluten-free flour
    • 1 ½ tsp cinnamon
    • pinch salt
    • ¼ cup gluten-free oats

    Instructions

    • Preheat oven to 350°F and line 2 baking sheets with parchment paper.
    • In a medium saucepan, add the peeled and sliced apples with the rest of the apple pie filling and cook until the mixture thickens, and the apples are soft. Remove from heat.
    • Cream together the butter and sugar. Add in the egg and vanilla. Mix in the dry ingredients until you have a dough.
    • Scoop the cookie dough into about 10 large cookies and use a tablespoon to indent the middle of each cookie. Bake for about 10 min. then remove and indent the cookies again before letting cool.
    • Fill the cooled cookies with the apple pie filling. Enjoy!
