Gluten-free & Dairy-free Apple Pie Cookies
These gluten-free & dairy-free apple pie cookies make for the perfect fall treat! All the cozy fall flavors of apple pie but in cookie form.
Ingredients
For the apple pie filling:
- 3 small apples sliced thinly
- splash lemon juice
- 5 tablespoon coconut sugar
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1 ½ tablespoon tapioca flour or arrowroot flour
- 1 cup water
- ⅛ teaspoon nutmeg
- ⅛ teaspoon ginger
- ⅛ teaspoon allspice
For the cookies:
- ½ cup vegan butter
- 1 teaspoon vanilla extract
- 1 ½ tablespoon molasses
- ¾ cup coconut sugar or brown sugar
- 1 egg
- 1 tablespoon tapioca flour or arrowroot flour
- 1 ½ cup gluten-free flour
- 1 ½ tsp cinnamon
- pinch salt
- ¼ cup gluten-free oats
Instructions
- Preheat oven to 350°F and line 2 baking sheets with parchment paper.
- In a medium saucepan, add the peeled and sliced apples with the rest of the apple pie filling and cook until the mixture thickens, and the apples are soft. Remove from heat.
- Cream together the butter and sugar. Add in the egg and vanilla. Mix in the dry ingredients until you have a dough.
- Scoop the cookie dough into about 10 large cookies and use a tablespoon to indent the middle of each cookie. Bake for about 10 min. then remove and indent the cookies again before letting cool.
- Fill the cooled cookies with the apple pie filling. Enjoy!
