


Gluten-free & Dairy-free Copycat Crumbl Lemon Glaze Cookies
These copycat Crumbl lemon glaze cookies are gluten-free and dairy-free while tasting just as delicious as the popular Crumbl version!
Ingredients
For the Cookies:
- ½ cup vegan butter softened
- ¾ cup granulated sugar
- ¼ cup brown sugar
- 1 egg
- 1 teaspoon lemon extract
- 1 tablespoon lemon juice
- 1 tablespoon lemon zest
- ¾ teaspoon baking soda
- ¼ teaspoon salt
- 1 ¾ cup gluten-free flour
- ¼+1/8 teaspoon xanthum gum only if your gluten-free flour blend does NOT already have it!
For the Lemon Glaze:
- ½ cup powdered sugar
- 2 tablespoon vegan butter
- 1 tablespoon lemon juice
- 2 teaspoon lemon zest
Instructions
- Preheat oven to 350°F and line two baking sheets with parchment paper. Cream together the butter and sugars until light and fluffy. Add in the egg, lemon juice, extract, and lemon zest.
- Mix in the dry ingredients until a dough forms. Scoop into 10 large cookies and freeze for about 20 min.
- Bake for 10-11 min. Let cool. While the cookies are cooling, melt the butter for the glaze and stir in the rest of the glaze ingredients until smooth. Spread over top of the cooled cookies, top with additional lemon zest, and enjoy!
