


Healthy Cinnamon Roll Baked Oats
These cinnamon roll baked oats are gluten-free, dairy-free, and made with simple ingredients! The perfect meal prep breakfast!
Ingredients
For the Oats:
- 3 cups gluten-free rolled oats
- 2 teaspoon baking powder
- 1 tablespoon cinnamon
- 2 eggs
- 1 cup nondairy milk
- 2 tablespoon coconut oil melted
- ¼ cup maple syrup
- ¼ cup coconut sugar can sub brown sugar
- 1 tsp vanilla extract
For the Optional Icing Drizzle:
- 1 cup powdered sugar
- 1-2 tablespoon water
Instructions
- Preheat oven to 350°F and line an 8x8 baking pan with parchment paper. In a large bowl, mix together wet ingredients before adding in the dry ingredients.
- Pour oat mixture into prepared pan and bake for about 20 min. While the oats are cooling, mix up optional icing and drizzle over top of the oats. Enjoy!
