Healthy Cinnamon Roll Baked Oats

These cinnamon roll baked oats are gluten-free, dairy-free, and made with simple ingredients! The perfect meal prep breakfast!

For the Oats:

  • 3 cups gluten-free rolled oats
  • 2 teaspoon baking powder
  • 1 tablespoon cinnamon
  • 2 eggs
  • 1 cup nondairy milk
  • 2 tablespoon coconut oil melted
  • ¼ cup maple syrup
  • ¼ cup coconut sugar can sub brown sugar
  • 1 tsp vanilla extract

For the Optional Icing Drizzle:

  • 1 cup powdered sugar
  • 1-2 tablespoon water


  • Preheat oven to 350°F and line an 8x8 baking pan with parchment paper. In a large bowl, mix together wet ingredients before adding in the dry ingredients.
  • Pour oat mixture into prepared pan and bake for about 20 min. While the oats are cooling, mix up optional icing and drizzle over top of the oats. Enjoy!
