I don’t know about you guys but I LOVE a good lemon dessert. Lemon cake, lemon bars, lemon ice cream, anything lemon and I’m down to try it. However, after drastically changing my diet for my gut health, I thought the days of me getting to enjoy something lemon-y and delicious were gone. WRONG! This paleo lemon poppy seed bread will satisfy all your lemon cravings.

Eating can become a source of extreme frustration when navigating a restricted diet. Will this upset my stomach? Will this make my symptoms worse? Is this okay for my gut? Eating something can turn into a stressful experience and it gets exhausting! That is why I love to bake my own breads and baked goodies that i KNOW are full of ingredients that are safe for my stomach and won't lead me to stress and worry. I'm all about alleviating that unnecessary stress!

The funny thing is, I used to hate any lemon-flavored foods and desserts. I think it was partly due to the fact that I never really gave them a chance. Once I finally decided to give the lemon bars my mom had made a chance, it was love! I'd definitely been missing out on this yummy flavor until then.

I’m not joking when I say I could eat this whole loaf in 2 days. It’s that good! The perfect amount of sweet but not full of fake sugars that will feed the bad gut bacteria. Natural sugar from honey and tastes delish! Also free from grains and gluten to make your gut that much happier. Enjoy!

Paleo Lemon Poppy Seed Bread

A healthy and delicious lemon poppyseed bread! Made from paleo and gut-friendly ingredients, this bread will fill all of your snack and dessert needs!

Ingredients
  

  • 1 ½ cups almond flour
  • ¼ cup coconut flour
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 3 large eggs
  • ¼ cup honey
  • 2 tablespoon coconut oil liquid
  • ½ cup lemon juice
  • zest of 1 lemon
  • ½ tablespoon poppy seeds
  • ¼ cup dairy free milk of choice I used almond milk

Instructions
 

  • Line a 9x5 loaf pan with parchment paper and preheat oven to 350°F.
  • Combine dry ingredients: almond flour, coconut flour, salt, and baking soda, in a large bowl
  • Add in the wet ingredients: eggs, honey, coconut oil, lemon juice, lemon zest, and almond milk. Combine well.
  • Fold in the poppy seeds and pour into pan.
  • Bake for 30-35 minutes or until edges are slightly crispy.
  • Enjoy! Can be frozen or can be stored in fridge for up to 3 days.
