


Paleo & Vegan Caramel Cookie Bars
These cookie bars have three delicious layers of shortbread cookie, date caramel, and chocolate while also being made with simple & healthy ingredients that are paleo, vegan, gluten-free, and dairy-free!
Ingredients
Shortbread Cookie Layer:
- 1 cup almond flour
- 2 tablespoon coconut oil melted
- 2 tablespoon maple syrup
- ¼ teaspoon salt
Date Caramel Layer:
- ¾ cup pitted dates soaked in hot water for at least 1 hour & drained
- ¼ cup cashew butter can sub any nut/seed butter
- 3 tablespoon almond milk
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
Chocolate Layer
- 1 cup nondairy/vegan chocolate chips
- 1 tablespoon coconut oil
Instructions
- Preheat oven to 350°F and line a loaf pan with parchment paper. In a large bowl, mix together shortbread cookie ingredients and press into prepared pan. Bake for 12-15 min. until the edges are just slightly golden.
- In a food processor, add your date caramel ingredients and blend until smooth and creamy. Spread the caramel evenly over the cooled cookie layer and place in freezer to set for at least 20 min.
- Melt together the chocolate and coconut oil until smooth. Pour and spread evenly over the caramel layer and return to freezer to set for about 20 min. Slice and enjoy!
