



Paleo & Vegan Copycat Fudge Stripe Cookies
These are a paleo & vegan version of the classic fudge stripe cookies we all know and love!
Ingredients
- 1 ¼ cup coconut flour
- ¾ cup coconut oil melted
- ½ cup maple syrup
- 1 cup vegan chocolate chips
Instructions
- Preheat oven to 325°F and line a baking sheet with parchment paper.
- Mix together the coconut flour, coconut oil, and maple syrup until you have a dough. The dough will be crumbly but don't worry!
- Slowly mold the dough into cookies on the prepared baking sheet. Using a piping tip or small cookie cutter, cut out the center of each cookie to create the classic fudge stripe cookie shape.
- Bake for 14-15 min. Let cookies completely cool before drizzling with the chocolate.
- Melt the chocolate and dip the bottom of each cookie into the chocolate before placing upside down on a tray to let the chocolate harden. Add the remaining chocolate to a Ziploc bag.
- Once the chocolate on the cookies is hardened, flip them back over. Drizzle the remaining chocolate over the cookies. Let harden before enjoying!
