



Vegan & Gluten-free Peanut Butter Protein Squares
High protein, healthier, gluten-free, dairy-free, and vegan peanut butter protein squares!
Ingredients
- 1 ¼ cup peanut butter smooth
- ⅓ cup maple syrup
- ½ cup vegan vanilla protein powder I love using Nuzest protein!
- 1 teaspoon vanilla extract
- 1 cup vegan chocolate chips
- 1 tablespoon coconut oil
Instructions
- Line an 8x8 baking pan with parchment paper and set aside. In a large bowl, mix together the peanut butter, maple syrup, vanilla, and protein powder until you have a dough.
- Press this mixture evenly into the prepared pan and place in the freezer to set while you melt together the chocolate and coconut oil. Pour the chocolate over the peanut butter layer and return to freezer to set before slicing and enjoying!
Notes
Store these in the fridge or freezer as they become very soft at room temperature!
