2 tablespoontapioca flourcan sub corn starch or arrowroot flour
½cupnon-dairy buttercold
½cupbrown sugaror coconut sugar
⅓cupsugar
2teaspoonvanilla extract
1egg yolk
1egg
1cupnon-dairy chocolate chips
Instructions
Cream together the butter and sugar until fluffy. Mix in the egg and vanilla.
Mix in the dry ingredients until well combined. Fold in the chocolate chips. Scoop into 8 large (they will be very large!) cookies and refrigerate for 1 hour.
Preheat oven to 400°F and line 2 baking sheets with parchment paper. Bake the cookies for about 9-10 min. Let cool and enjoy!
