Gluten-free & Dairy Free Copycat Levain Bakery Cookies

These are a delicious homemade copycat Levain Bakery cookie that are gluten-free, dairy-free, and ooey gooey goodness!

Ingredients
  

  • 1 ½ cup gluten-free flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoon tapioca flour can sub corn starch or arrowroot flour
  • ½ cup non-dairy butter cold
  • ½ cup brown sugar or coconut sugar
  • cup sugar
  • 2 teaspoon vanilla extract
  • 1 egg yolk
  • 1 egg
  • 1 cup non-dairy chocolate chips

Instructions
 

  • Cream together the butter and sugar until fluffy. Mix in the egg and vanilla.
  • Mix in the dry ingredients until well combined. Fold in the chocolate chips. Scoop into 8 large (they will be very large!) cookies and refrigerate for 1 hour.
  • Preheat oven to 400°F and line 2 baking sheets with parchment paper. Bake the cookies for about 9-10 min. Let cool and enjoy!
