Preheat oven to 350°F and line 2 baking sheets with parchment paper.
In a large bowl, mix together the mashed banana, egg, coconut oil, vanilla, maple syrup, and sugar until combined.
Mix in the dry ingredients until you have a cookie dough type texture. Scoop into about 1-2 tablespoon sized bites and lightly flatten on the prepared baking sheets.
Bake the bites for about 8-10 minutes. Let cool.
For the paleo frosting, melt the coconut butter until smooth. Mix in the maple syrup and spread over each of the cookies.
For the regular icing, mix the powdered sugar with 1 teaspoon of water, add more 1 teaspoon at a time until you achieve the consistency you'd like. Enjoy!
