1 ½cupgluten-free flourI use the nut-free/gluten-free flour blend from Namaste (sold at Costco!)
1tablespoontapioca flour
⅓cupcacao powder
1teaspoonbaking soda
½cupnon-dairy butter
½cupsugar
½cupbrown sugar
1egg
2teaspoonnon-dairy milk
1teaspoonvanilla extract
Instructions
Cream together the butter and sugars until light and fluffy. Mix in the egg and vanilla until smooth.
Mix in the dry ingredients until combined. Add your non-dairy milk. Cover the dough and place in the fridge for 30 minutes.
Preheat oven to 350°F and line 2 baking sheets with parchment paper. Scoop into large cookies and roll in granulated sugar before placing on the prepared baking sheets.
Bake for about 10-11 min. and let cool before enjoying!
