Tahini Coconut Oat Cookie Bars

These tahini coconut oat cookie bars are ooey, gooey, gluten-free, dairy-free, refined sugar-free, and so so delicious!

Ingredients
  

  • ½ cup smooth tahini can sub any nut butter of choice
  • 2 eggs
  • ½ cup melted non-dairy butter can sub melted coconut oil
  • 1 ½ cup almond flour
  • ½ cup gluten-free oats
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 1 ½ teaspoon baking powder
  • cup shredded coconut unsweetened
  • ¾ cup brown sugar or coconut sugar
  • ½ cup non-dairy chocolate chips

Instructions
 

  • Preheat oven to 350°F and line an 8x8 pan with parchment paper. In a large bowl, mix together all wet ingredients until smooth.
  • Mix in the dry ingredients until well combined. Fold in the chocolate chips. Spread into prepared pan and bake for 20-25 min. Bake closer to 20 min. for them to be super gooey! Let cool and enjoy!

Notes

Be sure to use coconut sugar for these to be considered refined sugar-free!
