Paleo & Vegan Samoa Brownies

These samoa brownies are paleo, vegan, gluten-free, dairy-free, refined sugar-free, simple to make, and delicious!

Ingredients
  

For the brownie base:

  • ¼ cup coconut oil melted
  • ½ cup almond butter
  • ½ cup coconut sugar
  • 2 flax eggs mix 2 tablespoon flaxseed with 6 tablespoon water and let sit
  • ½ cup cacao powder unsweetened
  • splash of vanilla extract
  • ¼ teaspoon baking powder
  • pinch of salt
  • ¼ cup almond flour

For the samoa topping:

  • ½ cup almond butter
  • ¼ cup maple syrup
  • 1 cup shredded coconut unsweetened

Instructions
 

  • Preheat oven to 350°F and line an 8x8 pan with parchment paper.
  • In a bowl, mix together all brownie ingredients until well combined. Press the brownie dough into the prepared pan and bake to 15-17 min. or until it seems set. Let cool while you make the samoa topping.
  • In a separate bowl, mix together the samoa topping ingredients until well combined. Spread this over the brownie base and place in the freezer to set for about 1 hour. Slice and enjoy!
