Ingredients
Dry Ingredients:
1 ½
cup
almond flour

tablespoon
tigernut flour

tablespoon
chia seeds

teaspoon
salt

tablespoon
hemp hearts

tablespoon
collagen powder
or any protein powder of choice

teaspoon
cinnamon

teaspoon
baking soda
Wet Ingredients:
2
large
ripe bananas
mashed
2
large
eggs
2
tablespoon
coconut oil
melted
1
teaspoon
vanilla extract
4
tablespoon
almond milk
or non dairy milk of choice
Instructions
Preheat oven to 350°F. Line the muffin pan with liners and set aside.
In a large bowl, combine the dry ingredients.
In a separate bowl, combine the wet ingredients, except for the coconut oil.
Add the wet ingredients to the dry and mix until well combined and then mix in the coconut oil.
Spoon the batter into the muffin pan and bake for 18-20 minutes or until a toothpick comes out clean. Let cool and enjoy!
