Paleo Banana Chia Protein Muffins

Ingredients
  

Dry Ingredients:

  • 1 ½ cup almond flour
  • 4 tablespoon tigernut flour
  • 4 tablespoon chia seeds
  • ½ teaspoon salt
  • 4 tablespoon hemp hearts
  • 2 tablespoon collagen powder or any protein powder of choice
  • ½ teaspoon cinnamon
  • 1 teaspoon baking soda

Wet Ingredients:

  • 2 large ripe bananas mashed
  • 2 large eggs
  • 2 tablespoon coconut oil melted
  • 1 teaspoon vanilla extract
  • 4 tablespoon almond milk or non dairy milk of choice

Instructions
 

  • Preheat oven to 350°F. Line the muffin pan with liners and set aside.
  • In a large bowl, combine the dry ingredients.
  • In a separate bowl, combine the wet ingredients, except for the coconut oil.
  • Add the wet ingredients to the dry and mix until well combined and then mix in the coconut oil.
  • Spoon the batter into the muffin pan and bake for 18-20 minutes or until a toothpick comes out clean. Let cool and enjoy!
