Gluten-free & Dairy-free Apple Pie Cookies
These gluten-free & dairy-free apple pie cookies make for the perfect fall treat! All the cozy fall flavors of apple pie but in cookie form.

For the apple pie filling:
- 3 small apples sliced thinly
- splash lemon juice
- 5 tablespoon coconut sugar
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1 ½ tablespoon tapioca flour or arrowroot flour
- 1 cup water
- ⅛ teaspoon nutmeg
- ⅛ teaspoon ginger
- ⅛ teaspoon allspice
For the cookies:
- ½ cup vegan butter
- 1 teaspoon vanilla extract
- 1 ½ tablespoon molasses
- ¾ cup coconut sugar or brown sugar
- 1 egg
- 1 tablespoon tapioca flour or arrowroot flour
- 1 ½ cup gluten-free flour
- 1 ½ tsp cinnamon
- pinch salt
- ¼ cup gluten-free oats
Preheat oven to 350°F and line 2 baking sheets with parchment paper.
In a medium saucepan, add the peeled and sliced apples with the rest of the apple pie filling and cook until the mixture thickens, and the apples are soft. Remove from heat.
Cream together the butter and sugar. Add in the egg and vanilla. Mix in the dry ingredients until you have a dough.
Scoop the cookie dough into about 10 large cookies and use a tablespoon to indent the middle of each cookie. Bake for about 10 min. then remove and indent the cookies again before letting cool.
Fill the cooled cookies with the apple pie filling. Enjoy!
