¼ +⅛teaspoonxanthum gumonly if your flour does not already have it!
⅔cupsugar
2teaspoonvanilla extract
1egg
½cupnondairy buttercan substitute ghee if you'd like
½teaspoonsalt
¼teaspoonbaking powder
½cupsprinkles
For the frosting:
½cupnondairy butter
2cupspowdered sugar
½teaspoonvanilla extract
1-2tablespoonnondairy milkas needed, to thin
Instructions
Preheat oven to 375°F and line an 8x8 baking pan with parchment paper. Cream together the butter and sugar. Mix in the egg and vanilla until combined.
Add in all dry ingredients until well combined. Fold in the sprinkles.
Press the dough into the prepared pan and bake for about 14-16 min. (this will vary based on your oven as well as how gooey you want them! I bake for 14 minutes.) Let cool while you make the frosting.
Whisk the butter until whipped. Mix in the powdered sugar ½ cup at a time until you get your desired consistency. Add in the vanilla. Add your milk if the frosting is too thick for your liking.
Spread frosting evenly onto the cookie base, slice, and enjoy!
