Vegan & Gluten-free Cashew Protein Fudge Bars
These cashew protein fudge bars are vegan, gluten-free, dairy-free, and absolutely delicious!

For the cashew fudge layer:
- 1 ½ cup cashews soaked in hot water fro at least 1 hour
- ⅔ cup gluten-free oats
- ¼ cup coconut oil melted
- ¼ cup maple syrup or honey
- ⅓ cup vegan vanilla protein powder
- pinch of salt
For the chocolate layer:
- ¼ cup maple syrup
- ½ cup cacao powder unsweetened
- ¼ cup coconut oil melted
- pinch of salt
In a food processor, blend the cashews, coconut oil, and maple syrup until smooth. Blend in the rest of the cashew layer ingredients until you have a dough.
Press the mixture into a parchment lined loaf pan and place in freezer to set for ½ hour.
Mix together all of the chocolate layer ingredients until smooth and spread evenly over the cashew layer. Let set before slicing and enjoying!
