Vegan & Paleo Fudge Blondie Bars

These fudge blondie bars are vegan, paleo, gluten-free, dairy-free, and absolutely delicious!

Ingredients
  

For the blondie base:

  • ½ cup smooth nut butter I used almond butter!
  • 1 cup almond flour
  • 5 tablespoon coconut sugar
  • ½ cup nondairy milk
  • splash of vanilla
  • ½ teaspoon baking powder
  • pinch of salt

For the fudge layer:

  • 4 tablespoon coconut oil
  • 1 ⅓ cup nondairy chocolate chips
  • ¼ cup nut butter I used the same almond butter as above!

Instructions
 

  • Preheat oven to 350°F and line an 8x8 pan with parchment paper. In a bowl, mix together all of the blondie base ingredients and pour into the pan. Bake for about 25 min.
  • Melt the chocolate and coconut oil together. Add the nut butter and continue to mix.
  • Once the base is baked and cooled slightly, pour the chocolate fudge layer on top, spreading evenly. Let harden in the fridge for a few hours. Slice and enjoy!
