Vegan & Paleo Fudge Blondie Bars
These fudge blondie bars are vegan, paleo, gluten-free, dairy-free, and absolutely delicious!

For the blondie base:
- ½ cup smooth nut butter I used almond butter!
- 1 cup almond flour
- 5 tablespoon coconut sugar
- ½ cup nondairy milk
- splash of vanilla
- ½ teaspoon baking powder
- pinch of salt
For the fudge layer:
- 4 tablespoon coconut oil
- 1 ⅓ cup nondairy chocolate chips
- ¼ cup nut butter I used the same almond butter as above!
Preheat oven to 350°F and line an 8x8 pan with parchment paper. In a bowl, mix together all of the blondie base ingredients and pour into the pan. Bake for about 25 min.
Melt the chocolate and coconut oil together. Add the nut butter and continue to mix.
Once the base is baked and cooled slightly, pour the chocolate fudge layer on top, spreading evenly. Let harden in the fridge for a few hours. Slice and enjoy!
