Paleo Pumpkin Spice Latte Bars

These pumpkin spice latter bars are a delicious fall treat that is paleo, gluten-free, & dairy-free!

Ingredients
  

For the bars:

  • ½ cup pumpkin puree
  • ½ cup coconut oil softened
  • 1 egg
  • splash of vanilla extract
  • 1 ½ cup almond flour
  • ½ teaspoon baking soda
  • 1 tablespoon +1 teaspoon pumpkin pie spice
  • 1 teaspoon cinnamon
  • 3 ½ tablespoon espresso powder
  • pinch of salt
  • ½ cup sugar*
  • ¼ cup brown sugar*

For the coconut frosting:

  • 1 can coconut milk only use the thick part
  • 2 tablespoon maple syrup
  • splash of vanilla extract
  • ½ teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • ¼ cup powdered sugar OPTIONAL if you want it sweeter (powdered sugar is not paleo)

Instructions
 

  • Preheat oven to 350°F and line an 8x8 pan with parchment paper. Using a hand mixer, mix together all of the bar ingredients until well combined.
  • Spread into the prepared pan and bake for 23-25 min. Let cool. While those are cooling, make the frosting.
  • Using a mixer, whip the coconut frosting ingredients until fluffy. Spread over the bars, slice, and enjoy!

Notes

*sub all coconut sugar (¾ cup) for paleo
