Paleo Pumpkin Spice Latte Bars
These pumpkin spice latter bars are a delicious fall treat that is paleo, gluten-free, & dairy-free!

Ingredients
For the bars:

cup
pumpkin puree
½
cup
coconut oil
softened

egg
splash
of vanilla extract
1 ½

almond flour
½
teaspoon
baking soda

tablespoon
+1 teaspoon pumpkin pie spice

teaspoon
cinnamon
3 ½
tablespoon
espresso powder
pinch
of salt
½
cup
sugar*
¼
cup
brown sugar*
For the coconut frosting:
1
can
coconut milk
only use the thick part

tablespoon
maple syrup
splash
of vanilla extract
½
teaspoon
pumpkin pie spice
½
teaspoon
cinnamon
¼
cup
powdered sugar
OPTIONAL if you want it sweeter (powdered sugar is not paleo)
Instructions
Preheat oven to 350°F and line an 8x8 pan with parchment paper. Using a hand mixer, mix together all of the bar ingredients until well combined.
Spread into the prepared pan and bake for 23-25 min. Let cool. While those are cooling, make the frosting.
Using a mixer, whip the coconut frosting ingredients until fluffy. Spread over the bars, slice, and enjoy!
Notes
*sub all coconut sugar (¾ cup) for paleo
