Paleo Berry Muffins

These berry muffins are paleo, gluten-free, dairy-free, and oh so delicious!

Ingredients
  

  • ¾ cup unsweetened applesauce
  • ½ cup nondairy milk
  • ½ tablespoon lemon juice
  • 3 eggs
  • 2 teaspoon vanilla extract
  • ¼ cup maple syrup
  • 1 ¾ cup cassava flour
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • pinch of salt
  • ½ cup blackberries chopped in halves
  • ½ cup strawberries chopped

Instructions
 

  • Preheat oven to 350°F and line a muffin tin with cupcake liners. Mix all ingredients, except for the berries, until well combined. Fold in the berries.
  • Pour the batter into the muffin liners and bake for about 22 min. Let cool and enjoy!
