Coconut Date Bites

These coconut date bites are paleo, vegan, gluten-free, dairy-free, refined sugar-free, no-bake, and oh so delicious!

Ingredients
  

  • 1 cup dates soaked in hot water for about 10 min.
  • 2 tablespoon almond butter smooth, natural
  • ¾ cup shredded coconut unsweetened
  • splash of vanilla extract
  • 2 tablespoon cacao powder unsweetened
  • extra shredded coconut for rolling

Method
 

  1. Line a baking sheet with parchment paper and set aside.
  2. In a food processor, blend together the dates and almond butter until smooth. Blend in the vanilla, cacao, and shredded coconut.
  3. Begin rolling into bites. Roll each bite in shredded coconut and place on the prepared baking sheet. Place the bites in the freezer to set for about 30 minutes before enjoying!
