Gluten-free & Dairy-free Almond Joy Brownies

These Almond Joy inspired brownies are gluten-free, dairy-free, simple to make, and absolutely delicious!

Ingredients
  

For the brownie base:
  • ½ cup non-dairy chocolate chips
  • ¼ cup coconut oil
  • cup brown sugar can sub coconut sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ¾ cup almond flour
  • ¼ cup cacao powder unsweetened
  • ½ teaspoon baking soda
For the coconut layer:
  • 1 ½ cup shredded coconut unsweetened
  • ¼ cup maple syrup
  • 2 tablespoon coconut oil melted
  • splash of vanilla extract
For the chocolate and topping:
  • ½ cup non-dairy chocolate chips
  • 1 tablespoon coconut oil
  • ½ cup chopped almonds

Method
 

  1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
  2. In a bowl, melt together the chocolate chips and coconut oil (for the brownie base) until smooth. Let cool slightly before whisking in the eggs, brown sugar, and vanilla until smooth. Mix in the rest of the brownie base ingredients until you have a batter.
  3. Spread the batter into the prepared pan and bake for about 10-12 minutes. Let cool while you make the coconut layer.
  4. In a bowl, mix together the coconut later ingredients. Press this evenly on top of the brownie base. Place in the freezer.
  5. Melt together the chocolate and coconut oil until smooth. Spread this evenly over the coconut layer and top with the chopped almonds. Slice and enjoy!
