Gluten-free & Dairy-free Cinnamon Roll Banana Bread

This cinnamon roll banana bread is gluten-free, dairy-free, grain-free, refined sugar-free, and absolutely delicious!

Ingredients
  

  • 2 ripe bananas mashed
  • 2 eggs
  • ¼ cup coconut oil melted
  • cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 cup almond flour
  • ¼ cup tapioca flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
For the cinnamon swirl:
  • 1 tablespoon cinnamon
  • 3 tablespoon coconut sugar
  • 1 tablespoon coconut oil melted
For the optional cream cheese icing:
  • 4 oz. non-dairy cream cheese
  • 1 cup powdered sugar

Method
 

  1. Preheat oven to 350℉ and line a loaf pan with parchment paper.
  2. In a bowl, mix together the banana bread ingredients until smooth. Spread half of the batter into the loaf pan.
  3. In a separate bowl, mix together the cinnamon swirl ingredients. Sprinkle this over top of the first half of the bread batter and use a toothpick to swirl through the batter. Add the remaining ½ of the batter on top.
  4. Bake for 45-55 minutes. The time will depend on your oven. Just check that a toothpick comes out clean. Let cool completely.
  5. Mix together the softened cream cheese and powdered sugar until you have a frosting/icing consistency. Spread this over top of your loaf and slice. Enjoy!
