Gluten-free & Dairy-free Frosted Banana Bread Cookie Bars

These frosted banana bread cookie bars are gluten-free, dairy-free, simple to make, and so delicious!

Ingredients
  

  • 1 egg yolk
  • cup mashed banana
  • ½ cup melted non-dairy butter
  • ½ cup sugar
  • cup brown sugar
  • 1 teaspoon cinnamon
  • 1 ¾ cup gluten-free flour
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ cup non-dairy frosting of choice

Method
 

  1. Preheat oven to 350℉ to line an 8x8 pan with parchment paper.
  2. In a bowl, mix together all of the ingredients until you have a cookie dough.
  3. Press into the prepared pan and bake for 9-10 minutes. Let cool before slicing and topping with your frosting of choice. Enjoy!
