Gluten-free & Dairy-free Honey Gingerbread Cookie Skillet

This honey gingerbread cookie skillet is gluten-free, dairy-free, simple to make, and absolutely delicious!

Ingredients
  

  • cup Wedderspoon honey
  • ¼ cup coconut oil melted
  • ¼ cup sugar
  • 3 tablespoon applesauce
  • splash of vanilla extract
  • 2 tablespoon molasses
  • 1 ¾ cup almond flour
  • ½ cup gluten-free flour
  • ¼ cup tapioca flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • ¼ teaspoon nutmeg
  • ¼ teaspoon cloves
  • extra honey to drizzle

Method
 

  1. Preheat oven to 350℉. In a bowl, mix together all of the wet ingredients until smooth.
  2. Mix in the dry ingredients until you have a smooth dough. Press the cookie dough into the skillet and bake for 18-22 minutes.
  3. Top with some dairy-free ice cream and a drizzle of honey and enjoy!
