Paleo Berry Muffins

These berry muffins are paleo, gluten-free, dairy-free, and oh so delicious!

Ingredients
  

  • ¾ cup unsweetened applesauce
  • ½ cup nondairy milk
  • ½ tablespoon lemon juice
  • 3 eggs
  • 2 teaspoon vanilla extract
  • ¼ cup maple syrup
  • 1 ¾ cup cassava flour
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • pinch of salt
  • ½ cup blackberries chopped in halves
  • ½ cup strawberries chopped

Method
 

  1. Preheat oven to 350°F and line a muffin tin with cupcake liners. Mix all ingredients, except for the berries, until well combined. Fold in the berries.
  2. Pour the batter into the muffin liners and bake for about 22 min. Let cool and enjoy!
