Paleo & Vegan Apple Pie Cookies

These apple pie cookies are paleo, vegan, gluten-free, dairy-free, and absolutely delicious!

Ingredients
  

For the cookie base:
  • 2 cup almond flour
  • ¼ cup maple syrup
  • ¼ cup coconut oil melted
  • 1.4 teaspoon baking powder
  • splash of vanilla extract
For the apple pie filling:
  • 3 medium apples diced
  • 3 tablespoon maple syrup
  • 2 teaspoon cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon tapioca flour can sub arrowroot flour
  • 3 tablespoon water
Optional icing drizzle (not paleo!):
  • ¼ cup powdered sugar
  • 1-2 teaspoon water to thin
Optional paleo icing drizzle:
  • ¼ cup melted coconut butter
  • 1 teaspoon maple syrup

Method
 

  1. Preheat oven to 350℉ and line 2 baking sheets with parchment paper.
  2. In a bowl, combine all of the cookie ingredients until you have a dough.
  3. Begin rolling the dough into balls about 2 tablespoon in size. Lightly flatten onto the prepared baking sheets, making an indent in the middle that the apple pie filling will go in. Bake for 10-12 minutes.
  4. While the cookies are baking, add the diced apples and water to a small saucepan and cookie over medium-low heat until the apples begin to soften. Once the apples are pretty soft, mix in the rest of the ingredients and continue cooking until you have a nice apple pie filling consistency.
  5. Once the cookies are out of the oven, begin spooning the apple pie filling into the center of each cookie. Allow them to cool before adding optional icing drizzle. Enjoy!
