Paleo & Vegan Banana Bread Truffles

These banana bread truffles are paleo, vegan, gluten-free, dairy-free, no-bake, and absolutely delicious!

Ingredients
  

  • 1 mashed banana
  • ½ cup smooth almond butter natural
  • ¼ cup maple syrup
  • ¾ cup almond flour
  • ¼ cup coconut flour
  • cup non-dairy white chocolate chips
  • 1 teaspoon coconut oil

Method
 

  1. Line a baking sheet with parchment paper and set aside.
  2. In a bowl, mix together the almond butter, mashed banana, and maple syrup until smooth. Mix in the almond flour and coconut flour until you have a dough. Let sit for about 10 minutes.
  3. Begin rolling the dough into truffles and placing on the prepared baking sheet. Place in freezer to set for about 30 minutes.
  4. Melt together the chocolate chips and coconut oil until smooth. Dip each truffle into the chocolate and let harden. Enjoy!
