Paleo & Vegan Lemon Cookie Bars

These lemon cookie bars are paleo, vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

Ingredients
  

  • 2 ½ cup almond flour
  • ¼ cup coconut oil melted
  • 5 tablespoon maple syrup
  • ¼ teaspoon almond extract
  • ½ teaspoon vanilla extract
  • 2 tablespoon lemon juice
  • zest of one lemon
For the optional icing (not paleo):
  • ½ cup powdered sugar
  • water to thin
For a paleo icing:
  • ¼ cup melted coconut butter
  • ½ tablespoon maple syrup

Method
 

  1. Preheat oven to 350℉ and line a loaf pan with parchment paper.
  2. In a bowl, mix together all of the cookie ingredients until you have a smooth dough. Fold in the lemon zest.
  3. Press the cookie dough into the prepared pan and bake for about 10 minutes. Let cool before slicing.
  4. Mix together your icing of choice and top the cookie bars with it. Enjoy!
