Paleo & Vegan Protein Caramel Bars

These protein caramel bars are paleo, vegan, gluten-free, dairy-free, and absolutely delicious!

Ingredients
  

For the protein shortbread base:
  • ½ cup almond flour
  • 3 tablespoon coconut flour
  • 4 tablespoon vanilla protein powder of choice
  • 1 tablespoon maple syrup
  • 2-4 tablespoon non-dairy milk
For the date caramel filling:
  • 1 cup dates soaked in hot water for 10 minutes prior to use
  • 1 tablespoon almond butter smooth, natural
  • hot water as needed
For the chocolate topping:
  • cup coconut cream
  • cup non-dairy chocolate chips

Method
 

  1. Line a loaf pan with parchment paper and set aside.
  2. In a bowl, mix together the shortbread ingredients until you have a dough. Add milk as needed until you achieve a soft dough.
  3. Press this into the prepared pan and set aside. In a food processor, blend together the caramel ingredients until you have a smooth caramel.
  4. Spread this evenly over the shortbread layer and place in the freezer. Melt together the coconut cream and chocolate chips until smooth. Spread the chocolate over caramel layer until smooth.
  5. Let set in the fridge for about 20 minutes before slicing and enjoying!
