Vegan & Gluten-free Gingerbread Coconut Cookie Bars

These gingerbread coconut cookie bars are vegan, gluten-free, dairy-free, and so delicious!

Ingredients
  

Cookie Base:
  • 2 cup almond flour
  • 2 tablespoon coconut flour
  • ¼ cup maple syrup
  • cup coconut oil melted
  • 1 ½ tablespoon molasses
  • 1 teaspoon ginger
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon cloves
Filling:
  • 1 cup non-dairy chocolate chips
  • ¾ cup shredded coconut unsweetened
  • ¼ cup sweetened condensed coconut milk
  • cinnamon for topping

Method
 

  1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
  2. In a bowl, mix together the cookie base ingredients until you have a dough. Press this evenly into the prepared pan.
  3. Sprinkle your chocolate chips evenly over the cookie layer, followed by the shredded coconut. Pour the sweetened condensed coconut milk evenly over top.
  4. Bake for about 18-20 minutes. Let the bars cool completely for at least 30 minutes before placing in the fridge to set for another 30 minutes minimum. Once they are set, you can slice and enjoy!
