Vegan & Gluten-free Peanut Butter Brookie Bars

These peanut butter brookie bars are vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

Ingredients
  

For the brownie base:
  • 2 flax eggs 2 tablespoon ground flaxseed mixed with 6 tablespoon water, let sit for 10 minutes before using
  • cup almond flour
  • 3 tablespoon cacao powder unsweetened
  • ¼ cup maple syrup
  • cup non-dairy chocolate chips
For the peanut butter cookie layer:
  • cup smooth peanut butter natural
  • 2 tablespoon maple syrup
  • 2 tablespoon coconut oil melted
  • ¾ cup almond flour
  • cup non-dairy chocolate chips

Method
 

  1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper and set aside.
  2. In a bowl, mix together the brownie base ingredients until you have a smooth batter. Spread this into the prepared pan.
  3. In a separate bowl, mix together the peanut butter cookie dough ingredients. Fold in the chocolate chips.
  4. Spread this peanut butter cookie dough on top of the brownie layer and bake for about 25-30 minutes. Let cool completely before slicing and enjoying!
