Vegan & Gluten-free Peanut Butter Cup Protein Bars

These peanut butter cup protein bars are vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

Ingredients
  

  • 1 ¼ cup smooth peanut butter smooth
  • ¼ cup maple syrup
  • ½ cup vegan chocolate protein powder of choice
  • ½ cup non-dairy chocolate chips
  • 1 teaspoon coconut oil

Method
 

  1. Line an 8x8 pan with parchment paper and set aside.
  2. In a bowl, mix together the peanut butter and maple syrup until smooth. Mix in the protein powder until you have a dough.
  3. Press the dough evenly into the pan. Melt together the chocolate chips and coconut oil until smooth.
  4. Spread the chocolate evenly on top of the protein dough layer. Set in the freezer to set.
  5. Slice into bars and enjoy!
