Soft Sugar Cookie Bars

These sugar cookie bars are super soft, gluten-free, dairy-free, simple to make, and absolutely delicious!

Ingredients
  

For the cookie base:

  • 1 ½ cup gluten-free flour
  • ¼+1/8 teaspoon xanthum gum only if your flour does not already have it!
  • cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 egg
  • ½ cup non-dairy butter
  • ½ teaspoon salt
  • ¼ teaspoon baking powder

For the frosting:

  • ½ cup non-dairy butter
  • 2 cup powdered sugar
  • ½ teaspoon vanilla extract
  • 1-2 tablespoon non-dairy milk as needed, to thin

Instructions
 

  • Preheat oven to 350°F and line an 8x8 baking pan with parchment paper.
  • In a mixer, cream together the butter and sugar until light and fluffy. Mix in the egg and extracts until combined.
  • Mix in the dry ingredients until you have a cookie dough. Press the dough into the prepared pan and bake for 11-12 min. Let cool.
  • Begin making the frosting. Whisk the butter until whipped. Mix in the powdered sugar ½ cup at a time until you have your desired frosting consistency. Add in the vanilla. Add in the milk if your frosting is too thick for your liking.
  • Spread the frosting over the cooled cookie base and slice into bars. Enjoy!
