¼+1/8teaspoonxanthum gumonly if your flour does not already have it!
⅔cupsugar
1teaspoonvanilla extract
1teaspoonalmond extract
1egg
½cupnon-dairy butter
½teaspoonsalt
¼teaspoonbaking powder
For the frosting:
½cupnon-dairy butter
2cuppowdered sugar
½teaspoonvanilla extract
1-2tablespoonnon-dairy milkas needed, to thin
Instructions
Preheat oven to 350°F and line an 8x8 baking pan with parchment paper.
In a mixer, cream together the butter and sugar until light and fluffy. Mix in the egg and extracts until combined.
Mix in the dry ingredients until you have a cookie dough. Press the dough into the prepared pan and bake for 11-12 min. Let cool.
Begin making the frosting. Whisk the butter until whipped. Mix in the powdered sugar ½ cup at a time until you have your desired frosting consistency. Add in the vanilla. Add in the milk if your frosting is too thick for your liking.
Spread the frosting over the cooled cookie base and slice into bars. Enjoy!
