    Soft Sugar Cookie Bars

    These sugar cookie bars remind me of those classic Lofthouse sugar cookies but in bar form! They're so so soft, gluten-free, dairy-free, and absolutely delicious. I highly recommend making a batch of these!

    Ingredients

    Here are the ingredients you'll need:

    • gluten-free flour
    • sugar
    • vanilla extract
    • egg
    • non-dairy butter
    • baking powder

    These sugar cookie bars are super soft, gluten-free, dairy-free, simple to make, and absolutely delicious!

    Ingredients Method

    Ingredients
      

    For the cookie base:
    • 1 ½ cup gluten-free flour
    • ¼+1/8 teaspoon xanthum gum only if your flour does not already have it!
    • ⅔ cup sugar
    • 1 teaspoon vanilla extract
    • 1 teaspoon almond extract
    • 1 egg
    • ½ cup non-dairy butter
    • ½ teaspoon salt
    • ¼ teaspoon baking powder
    For the frosting:
    • ½ cup non-dairy butter
    • 2 cup powdered sugar
    • ½ teaspoon vanilla extract
    • 1-2 tablespoon non-dairy milk as needed, to thin

    Method
     

    1. Preheat oven to 350°F and line an 8x8 baking pan with parchment paper.
    2. In a mixer, cream together the butter and sugar until light and fluffy. Mix in the egg and extracts until combined.
    3. Mix in the dry ingredients until you have a cookie dough. Press the dough into the prepared pan and bake for 11-12 min. Let cool.
    4. Begin making the frosting. Whisk the butter until whipped. Mix in the powdered sugar ½ cup at a time until you have your desired frosting consistency. Add in the vanilla. Add in the milk if your frosting is too thick for your liking.
    5. Spread the frosting over the cooled cookie base and slice into bars. Enjoy!

      Why is your frosting in the picture pink? Did you add food coloring ?

        We’ve used powdered freeze dried strawberries for pink coloring before…perhaps that or beet juice?
