Brown Sugar Cinnamon Granola

This homemade granola is gluten-free, dairy-free, vegan, and oh so delicious!

Ingredients
  

For the granola:
  • 3 cup gluten-free oats
  • ¼ cup coconut oil melted
  • ½ cup maple syrup
  • 1 tablespoon cinnamon
  • 3 tablespoon brown sugar can sub coconut sugar
For the pastry "pop tart" pieces:
  • 6 tablespoon almond flour
  • 1 tablespoon coconut flour
  • 4 teaspoon coconut oil melted
  • 4 teaspoon water

Method
 

  1. Preheat oven to 325℉ and line a large baking sheet with parchment paper.
  2. In a large bowl, mix together all of the ingredients for the granola (except for the brown sugar) until well combined. Spread this granola mixture evenly onto the prepared baking sheet.
  3. In a separate bowl, mix together the pastry dough ingredients until you have a dough.
  4. Begin crumbling this pastry dough evenly over top of the granola mixture on the baking sheet. Sprinkle the brown sugar evenly over top of everything.
  5. Bake for about 15 minutes, remove from oven and toss the granola around to make sure no parts are burning, and return to oven for another 10-15 minutes. Let cool before breaking apart and enjoying!
