Chocolate Avocado Cookie Bars

These chocolate avocado cookie bars are fudgy and delicious! They're gluten-free, dairy-free, paleo-friendly, and easy to make!

Ingredients
  

  • 1 avocado
  • ½ cup sugar sub coconut sugar or a sugar substitute for paleo!
  • cup coconut oil melted
  • pinch of salt
  • 2 eggs*
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1 ¾ cup almond flour
  • cup +1 tablespoon coconut flour
  • ¼ cup cacao powder
  • ½ cup non-dairy chocolate chips

Method
 

  1. Preheat oven to 350°F and line an 8x8 pan with parchment paper. In a blender or food processor, add the avocado, eggs, coconut oil, vanilla extract, lemon juice, and sugar. Blend until smooth.
  2. In a large bowl, mix together the rest of the dry ingredients. Mix in the wet mixture you just blended. Once you have a dough, fold in the chocolate chips.
  3. Press the mixture into the prepared pan and bake for 10-13 minutes. Let cool before slicing and enjoying!

Notes

*You can try subbing flax eggs or an egg replacement for vegan, but I can't guarantee results as I haven't tried this myself!
