These chocolate avocado cookie bars are super fudgy and so so delicious! They are similar to my Chocolate Fudge Avocado Cookies, but in cookie bar form instead. You can't taste the avocado at all; it just adds the best texture! These are gluten-free, dairy-free, paleo-friendly, and so tasty!
Ingredients

- avocado
- coconut oil
- eggs
- vanilla extract
- lemon juice
- almond flour
- coconut flour
- cacao powder
- sugar or sugar substitute
- non-dairy chocolate chips

Chocolate Avocado Cookie Bars
These chocolate avocado cookie bars are fudgy and delicious! They're gluten-free, dairy-free, paleo-friendly, and easy to make!
Ingredients
- 1 avocado
- ½ cup sugar sub coconut sugar or a sugar substitute for paleo!
- ⅓ cup coconut oil melted
- pinch of salt
- 2 eggs*
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
- 1 ¾ cup almond flour
- ⅓ cup +1 tablespoon coconut flour
- ¼ cup cacao powder
- ½ cup non-dairy chocolate chips
Instructions
- Preheat oven to 350°F and line an 8x8 pan with parchment paper. In a blender or food processor, add the avocado, eggs, coconut oil, vanilla extract, lemon juice, and sugar. Blend until smooth.
- In a large bowl, mix together the rest of the dry ingredients. Mix in the wet mixture you just blended. Once you have a dough, fold in the chocolate chips.
- Press the mixture into the prepared pan and bake for 10-13 minutes. Let cool before slicing and enjoying!
Notes
*You can try subbing flax eggs or an egg replacement for vegan, but I can't guarantee results as I haven't tried this myself!
