Chocolate Protein Sugar Cookie Bars

These chocolate protein sugar cookie bars are vegan, gluten-free, dairy-free, paleo-friendly, and absolutely delicious!

Ingredients
  

  • ½ cup cashew butter can sub any nut/seed butter!
  • ¼ cup coconut oil melted
  • 2 tablespoon maple syrup
  • cup cacao powder unsweetened
  • cup +1 tablespoon almond flour
  • ½ cup vegan vanilla protein powder
  • 1 teaspoon vanilla extract
  • ¼ cup vegan/paleo frosting OPTIONAL

Method
 

  1. Line a loaf pan with parchment paper and set aside.
  2. In a large bowl, mix together all ingredients, except for the frosting, until you have a dough.
  3. Press the dough into the prepared pan and place in the fridge to set for about 30 min.-1 hour. Top with optional frosting, slice, and enjoy!
