These chocolate protein sugar cookie bars are simply a dream! They have a super soft and fudgy texture that is to die for. They're packed with protein and are vegan, gluten-free, dairy-free, and paleo-friendly!

Ingredients
Here are the ingredients you'll need:
- cashew butter
- coconut oil
- maple syrup
- cacao powder
- almond flour
- protein powder of choice
- vanilla extract
- optional frosting

Chocolate Protein Sugar Cookie Bars
These chocolate protein sugar cookie bars are vegan, gluten-free, dairy-free, paleo-friendly, and absolutely delicious!
Ingredients
- ½ cup cashew butter can sub any nut/seed butter!
- ¼ cup coconut oil melted
- 2 tablespoon maple syrup
- ⅓ cup cacao powder unsweetened
- ⅓ cup +1 tablespoon almond flour
- ½ cup vegan vanilla protein powder
- 1 teaspoon vanilla extract
- ¼ cup vegan/paleo frosting OPTIONAL
Instructions
- Line a loaf pan with parchment paper and set aside.
- In a large bowl, mix together all ingredients, except for the frosting, until you have a dough.
- Press the dough into the prepared pan and place in the fridge to set for about 30 min.-1 hour. Top with optional frosting, slice, and enjoy!
