Gluten-free & Dairy-free Apple Cinnamon Bars

These apple cinnamon bars are gluten-free, dairy-free, simple to make, and absolutely delicious!

Ingredients
  

  • ½ cup coconut oil softened
  • 1 egg
  • 3 tablespoon honey
  • ¼ cup sugar
  • 2 cup almond flour
  • 1 tablespoon tapioca flour
  • 2 ½ tablespoon coconut flour
  • ½ teaspoon baking powder
  • 2 teaspoon cinnamon
  • 1 teaspoon apple pie spice
  • ½ cup chopped apples
For the caramel drizzle:
  • 8 caramels
  • 3 tablespoon coconut milk

Method
 

  1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
  2. In a bowl using a hand mixer or stand mixer, whip the coconut oil and sugar together. Add in the honey and egg and whp again.
  3. Mix in the tapioca flour, cinnamon, apple pie spice, baking powder, and coconut flour until well combined. Mix in the almond flour.
  4. Fold in your diced apples and spread the dough into the prepared pan. Bake for about 12-15 minutes. Let cool while you make the caramel drizzle.
  5. Melt together the caramels and coconut milk until you have a smooth caramel. Drizzle this over top of the bars, slice, and enjoy!
