Gluten-free & Dairy-free Banana Bread Cookie Bars

These banana bread cookie bars are gluten-free, dairy-free, simple to make, and absolutely delicious!

Ingredients
  

  • 1 egg yolk
  • cup mashed ripe banana
  • ½ cup non-dairy butter melted
  • ½ cup sugar
  • cup brown sugar
  • 1 ¾ cup gluten-free flour
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon cinnamon
  • pinch of salt
  • splash of vanilla extract
  • ½ cup non-dairy chocolate chips

Method
 

  1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
  2. In a bowl, combine the melted butter, egg yolk, vanilla extract, and sugars until smooth. Mix in the dry ingredients until you have a dough.
  3. Fold in the chocolate chips. Press the dough into your prepared pan and bake for about 10-12 minutes. Let cool before adding optional flaky sea salt and slicing. Enjoy!
