These banana bread cookie bars are simply a dream! I love banana bread and I love cookie bars, so what could be better than a combo of them? These banana bread cookie bars are gluten-free, dairy-free, simple to make, and so delicious!

This was inspired by my banana bread cookie recipe! I love to pair a batch of these with my fudgy flourless brownies.
Ingredients
Here are the ingredients you'll need:
- ripe bananas
- egg
- non-dairy butter
- sugar
- brown sugar
- gluten-free flour
- baking soda
- baking powder
- cinnamon
- non-dairy chocolate chips
- vanilla extract

These banana bread cookie bars are gluten-free, dairy-free, simple to make, and absolutely delicious!
Ingredients
Method
- Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
- In a bowl, combine the melted butter, egg yolk, vanilla extract, and sugars until smooth. Mix in the dry ingredients until you have a dough.
- Fold in the chocolate chips. Press the dough into your prepared pan and bake for about 10-12 minutes. Let cool before adding optional flaky sea salt and slicing. Enjoy!
