Gluten-free & Dairy-free Banana Bread Cookies

These banana bread chocolate chip cookies are gluten-free, dairy-free, super soft, and oh so tasty!

Ingredients
  

  • 1 egg yolk
  • cup ripe banana mashed
  • ½ cup non-dairy butter melted
  • ½ cup sugar
  • cup brown sugar
  • 1 ¾ cup gluten-free flour
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon cinnamon
  • pinch of salt
  • splash of vanilla extract
  • ½ cup non-dairy chocolate chips

Method
 

  1. Preheat oven to 350℉ and line 2 baking sheets with parchment paper.
  2. In a bowl, mix together the butter, mashed banana, egg, vanilla, sugar, and brown sugar until smooth.
  3. Mix in the dry ingredients until you have a dough. Fold in the chocolate chips.
  4. Scoop the dough into cookies and place on the prepared baking sheets. Bake for about 9-10 minutes. Sprinkle with optional sea salt and enjoy!
