    These banana bread cookies are the perfect combination of banana bread and a chocolate chip cookie! I'm a banana bread lover through and through, and these cookies are quickly becoming a new favorite. These cookies are gluten-free, dairy-free, super soft, and absolutely delicious!

    Ingredients

    Here are the ingredients you'll need:

    • ripe banana
    • non-dairy butter
    • gluten-free flour
    • baking soda & powder
    • egg yolk
    • cinnamon
    • sugar
    • brown sugar
    • non-dairy chocolate chips

    Ingredients Method

    Ingredients
      

    • 1 egg yolk
    • ⅓ cup ripe banana mashed
    • ½ cup non-dairy butter melted
    • ½ cup sugar
    • ⅓ cup brown sugar
    • 1 ¾ cup gluten-free flour
    • ½ teaspoon baking soda
    • ¼ teaspoon baking powder
    • ½ teaspoon cinnamon
    • pinch of salt
    • splash of vanilla extract
    • ½ cup non-dairy chocolate chips

    Method
     

    1. Preheat oven to 350℉ and line 2 baking sheets with parchment paper.
    2. In a bowl, mix together the butter, mashed banana, egg, vanilla, sugar, and brown sugar until smooth.
    3. Mix in the dry ingredients until you have a dough. Fold in the chocolate chips.
    4. Scoop the dough into cookies and place on the prepared baking sheets. Bake for about 9-10 minutes. Sprinkle with optional sea salt and enjoy!
