Gluten-free & Dairy-free Coconut Rice Krispie Treats

These coconut rice krispie treats are gluten-free, dairy-free, vegan-friendly, and absolutely delicious!

Ingredients
  

  • 4 tablespoon non-dairy butter
  • 5 ⅓ cup marshmallows use vegan marshmallows if strictly vegan!
  • 4 cup puffed rice cereal
  • 1 cup unsweetened shredded coconut
  • extra shredded coconut and marshmallows for topping

Method
 

  1. Line an 8x8 pan with parchment paper and set aside.
  2. In a large saucepan, melt together your non-dairy butter and marshmallows until completely melted and sticky.
  3. Remove from heat and stir in the shredded coconut. Fold in the puffed rice cereal until completely coated by the marshmallow mixture.
  4. Press the mixture into the prepared pan. I like to stick my hand in a ziploc bag, spray the bag with avocado oil, and use that to press the mixture into the pan without it sticking to everything. Let firm up for about 30 minutes before slicing and enjoying!
