Gluten-free & Dairy-free Cookies and Cream Banana Bread

This cookies and cream banana bread is gluten-free, dairy-free, and absolutely delicious!

Ingredients
  

  • 2 eggs
  • 1 ½ cup mashed banana
  • 1 teaspoon vanilla extract
  • ½ cup brown sugar can sub coconut sugar
  • 6 tablespoon melted non-dairy butter
  • 2 cup gluten-free flour
  • 1 ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¾ cup gluten-free sandwich cookies crushed

Method
 

  1. Preheat oven to 350℉ and line a loaf pan with parchment paper.
  2. In a bowl, combine all of your wet ingredients until smooth. Mix in your dry ingredients (except for the cookies) until you have a smooth batter. Fold in the sandwich cookies.
  3. Spread the batter into the prepared pan and bake for about 50-60 minutes, or until a toothpick comes out clean. Let cool before slicing and enjoying!
