Gluten-free & Dairy Free Copycat Levain Bakery Cookies

These are a delicious homemade copycat Levain Bakery cookie that are gluten-free, dairy-free, and ooey gooey goodness!

Ingredients
  

  • 1 ½ cup gluten-free flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoon tapioca flour can sub corn starch or arrowroot flour
  • ½ cup non-dairy butter cold
  • ½ cup brown sugar or coconut sugar
  • cup sugar
  • 2 teaspoon vanilla extract
  • 1 egg yolk
  • 1 egg
  • 1 cup non-dairy chocolate chips

Method
 

  1. Cream together the butter and sugar until fluffy. Mix in the egg and vanilla.
  2. Mix in the dry ingredients until well combined. Fold in the chocolate chips. Scoop into 8 large (they will be very large!) cookies and refrigerate for 1 hour.
  3. Preheat oven to 400°F and line 2 baking sheets with parchment paper. Bake the cookies for about 9-10 min. Let cool and enjoy!
