Gluten-free & Dairy-free Dark Chocolate Pistachio Blondies

These dark chocolate pistachio blondies are gluten-free, dairy-free, simple to make, and oh so delicious!

Ingredients
  

  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup sugar
  • ½ cup non-dairy butter melted
  • 1 cup gluten-free flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ cup pistachios
  • ½ cup non-dairy chocolate chips

Method
 

  1. Preheat oven to 350℉ and line a 8x8 pan with parchment paper. In a bowl, combine the egg, sugar, vanilla, and melted butter until smooth.
  2. Mix in the dry ingredients until you have a dough. Fold in the pistachios and chocolate chips.
  3. Spread the batter into the prepared pan and bake for about 24-26 minutes. Let cool before slicing and enjoying!
