    These pistachio blondies are so soft and dreamy! If you are a pistachio lover, these blondies are most definitely for you. These dark chocolate pistachio blondies are gluten-free, dairy-free, simple to make, and so delicious!

    I love making these for any occasion! I like to pair them with a batch of my paleo flourless brownies and paleo chocolate chip cookies.

    Ingredients

    Here are the ingredients you'll need:

    • pistachios
    • non-dairy butter
    • sugar
    • gluten-free flour
    • egg
    • baking powder and baking soda
    • non-dairy dark chocolate chips

    Store in an airtight container for up to 4 days!

    Top tip

    Be sure not to overbake these, they are most delicious when they are soft and gooey!

    These dark chocolate pistachio blondies are gluten-free, dairy-free, simple to make, and oh so delicious!

    Ingredients Method

    Ingredients
      

    • 1 egg
    • 1 teaspoon vanilla extract
    • 1 cup sugar
    • ½ cup non-dairy butter melted
    • 1 cup gluten-free flour
    • ½ teaspoon baking powder
    • ½ teaspoon baking soda
    • ½ cup pistachios
    • ½ cup non-dairy chocolate chips

    Method
     

    1. Preheat oven to 350℉ and line a 8x8 pan with parchment paper. In a bowl, combine the egg, sugar, vanilla, and melted butter until smooth.
    2. Mix in the dry ingredients until you have a dough. Fold in the pistachios and chocolate chips.
    3. Spread the batter into the prepared pan and bake for about 24-26 minutes. Let cool before slicing and enjoying!
