Gluten-free & Dairy-free Double Chocolate Muffins

These chocolate muffins are gluten-free, dairy-free, simple to make, and chocoalte heaven!

Ingredients
  

  • 2 eggs
  • cup dairy-free sour cream
  • ½ cup coconut oil melted
  • ½ cup coconut milk
  • 1 teaspoon vanilla extract
  • 1 cup sugar
  • 2 cup gluten-free flour
  • cup cacao powder unsweetened
  • cup non-dairy chocolate chips

Method
 

  1. Preheat oven to 425℉ and line 2 muffin pans.
  2. In a large bowl or using a mixer, mix together the eggs, coconut milk, coconut oil, sour cream, vanilla, and sugar until smooth.
  3. Mix in the cacao powder. Mix in the flour and baking soda until you have a smooth batter. Fold in the chocolate chips.
  4. Begin scooping the batter into the prepared muffin pans about ¾ of the way full.
  5. Bake for about 10 minutes before reducing the heat to 350℉ and baking for another 10-15 minutes (or until a toothpick comes out clean!). Enjoy!
